There is something timeless about coming home.

For Jonathan and Marissa Gamboa, returning to the Philippines after decades abroad was more than a retirement plan. It was a homecoming of the heart. After building successful careers in the United States, the Gamboas followed the quiet pull of their roots, drawn back by the sea’s familiar scent, the comforting sizzle of garlic in the pan, and the unhurried warmth of island life.

They chose the serene beauty of Calatagan, Batangas to begin again. As they embraced a life of simplicity, they noticed a gap. Few dining options paired excellent food with warm, elegant ambiance. What began as a personal longing soon transformed into a shared vision: to create a space that felt like home but offered something new.

This dream became De Novo.

A Fresh Start, Built with Purpose

Construction began in 2024 with intention, precision, and a clear vision. De Novo opened its
doors on April 8 during an intimate soft launch on Sir Jonathan’s birthday. The name De Novo,
which means afresh or anew, was a perfect reflection of the journey — a new beginning shaped
by experience and filled with promise.

Located in Warehouse 2, Summit Point Avenue, Brgy. Inosloban, Lipa City, De Novo is a
restaurant, bar, café, and events space all in one. Every corner is crafted to offer not just a meal but a moment. It is a place where people gather, celebrate, and connect.

Inspired by the World

At the heart of De Novo is a menu that reimagines Filipino comfort food with refined technique and global influence. Born from Jonathan and Marissa’s shared love of travel and food, many of the dishes are inspired by flavors they’ve encountered across the world and are reinterpreted with a uniquely Filipino soul.

Their journeys, from the vibrant street food of Southeast Asia to the rustic kitchens of Europe, sparked a desire to bring those flavors home. At De Novo, guests can explore dishes that blend international inspiration with local flair, creating a dining experience that feels both comforting and refreshingly new.

Some of the most talked-about dishes include the Octopus Sisig, served sizzling and topped with bone marrow. It reinvents a Filipino staple with boldness and flair. The Bistek Tagalog offers deep, comforting notes of marinated beef and caramelized onion. The Binagoongang Bagnet delivers a masterful balance of crunch and richness, laid over eggplant and glazed with savory shrimp paste. For those who crave spice, the Bicol Express simmers pork in creamy coconut milk with a warming chili kick. Seafood lovers enjoy the De Novo Baked Bangus, finished with a smooth garlic aioli and baked to golden perfection. The Smoked Baby Back Ribs, slow-cooked and basted in a house-made glaze, offer a hearty, smoky indulgence.

Every meal begins with a thoughtful welcome: complimentary freshly baked bread and pastries served on a rotating basis. These little surprises delight guests with something new on each visit.

Among the most beloved baked goods is De Novo’s La Corteza, the signature empanada. With its golden, flaky crust and rich, flavorful filling, it has become a staple for regulars and a delightful discovery for first-time guests. Whether enjoyed alongside a meal or taken home as a treat, La Corteza captures the essence of De Novo — quality, tradition, and elegance in every bite.

A Space for Every Occasion

De Novo has become a favorite not just for meals but for memories. To meet growing demand, three beautiful function halls were thoughtfully designed for private events of all sizes.

De Novo’s VIP Room 1 is an intimate space ideal for 10 to 15 guests, perfect for family dinners, business lunches, or small celebrations.

De Novo’s VIP Room 2 is a warm and airy room for 20 to 30 guests, suited for showers, reunions, and milestone moments.

De Novo’s Events Room is the grandest venue, comfortably accommodating 50 to 70 guests. It is ideal for weddings, debuts, and large gatherings.

Since opening, De Novo has hosted a wide range of events. From heartfelt anniversaries to elegant corporate dinners, each gathering has been met with praise for its seamless service, inviting ambiance, and attention to detail. Many guests have already reserved future dates, eager to return with more stories and celebrations to share.
